Today is such a good day for soup. It’s a beautiful sunny, cold day in Maryland. I just want to sit inside with a warm bowl of something good and a food magazine. Okay, I’ll only get to enjoy this setup for about an hour…I’ve got a whole bunch of other stuff to do! This soup is quick and tasty. It’s like having the best worlds of tacos and chili in a soup.
Beef Tortilla Soup
Makes 1 quart
1 pound of ground beef
1 cup chopped onion
1 twelve ounce jar of salsa
1 fifteen ounce can of black beans
2 cups frozen roasted corn kernels, I used Trader Joe’s brand*
1/2 pkg taco seasoning, I used Taco Bell*
1 1/2 teaspoons ground cumin
2 cloves garlic, chopped
1 1/2 cups water
In a skillet on medium high heat, saute ground beef and onion until beef is browned. Add garlic, taco seasoning, and cumin and stir until blended. Remove beef mixture from heat. In a large sauce pan(4 qt.), add black beans, salsa, corn, water, and beef mixture. Cook on medium/low heat, when mixture comes to a boil, turn heat to low. Cover and simmer for 20 minutes. Serve topped with tortilla chips, cheese, sour cream and avocado. Sprinkle with hot paprika.
