I’m not trying to pass off zucchini as french fries. Nothing can replace a good fried potato but zucchini fries stand on their own! They are soaked in buttermilk, seasoned and rolled in a mixture of bread crumbs, parmesan cheese, and flour, then fried to a golden brown.

The following recipe with for 2 servings but it can easily be doubled or tripled but, if preparing more than 2 servings, they will have to be fried in batches.
Zucchini Fries
Serves 2
2 cups cut zucchini, about 1 medium or 2 small sized zucchini
1/2 cup buttermilk
1/4 teaspoon black pepper
1/4 teaspoon onion powder
1/2 cup bread crumbs
1/4 cup grated parmesan cheese
1/4 cup all purpose flour
Cooking Oil
Salt(I used my bff, black truffle salt)
In a shallow dish, coat zucchini with buttermilk and allow to soak for about 30 minutes. Pour off excess buttermilk and season zucchini with pepper and onion powder. Combine bread crumbs, cheese, and flour in a shallow dish and dredge seasoned zucchini in the mixture. Heat oil(pour about a 1/2 inch depth) on medium-high in a heavy skillet. When oil is ready, carefully place zucchini in a single layer in the hot oil. Fry for 3 minutes and turn pieces over and fry for another 2 minutes. Drain on a paper towel lined plate. Season to taste with salt and serve immediately.
