Our food menu is made two weeks in advance…While preparing our current meal plan, my husband suggested that I make salmon sliders instead of croquettes. I chose yukon & sweet potato fries to serve along with the sliders. ‘Gotta admit it, sometimes husbands really do know best!
Salmon Sliders
Makes 8
1-15 oz. can of pink salmon, drained with skin and bones discarded
½ cup onion, chopped
1 cup panko bread crumbs
2 eggs, beaten
1 teaspoon prepared mustard
½ teaspoon seafood seasoning
½ teaspoon black pepper
½ cup oil, for frying
½ ripe avocado, sliced
2-3 Roma tomatoes, sliced
8 slider buns(mini burger buns), toasted

Mayonnaise*
In a large bowl, flake salmon. Add onion, ½ cup of panko, eggs, mustard, seafood seasoning, and pepper. Combine well and make into 8 small patties. Put remaining panko in a shallow dish, and dredge patties in panko. In a large frying pan, heat oil on medium high heat. Fry the patties for 3-4 minutes on each side, until golden brown. Drain on paper towel lined plate.
To serve, apply mustard, mayonnaise, 1 salmon patty, avocado and tomato slices to each bun.
*If you’d like a little spice, add a few dashes of hot sauce to about three tablespoons of mayonnaise…prepare sliders as directed.
