While not my mama’s traditional recipe, these salmon potato croquettes give me the best of two things that I love…Salmon Croquettes and Potato Pancakes! These croquettes are super easy. Simply combine the salmon, cooked potatoes, onion, and a few ingredients. Shape into patties and dredge in Panko crumbs before frying to a golden brown. Top with the spicy garlic mustard sauce and get ready for the raves!

Salmon Potato Croquettes with Spicy Garlic Mustard Sauce
makes 6
1-15oz. can pink salmon, drained with skin and bones discarded
1 cup cooked chopped potato
1/2 cup chopped onion
2 eggs
1 cup panko crumbs, divided
2 tablespoons all-purpose flour
1 teaspoon seafood seasoning, I used Chef Pauls
1/2 teaspoon celery seeds
1/2 teaspoon black pepper
Vegetable Oil(about 1/2 cup)
Spicy Garlic Mustard Sauce(recipe below)
In a large bowl, combine salmon, potato, onion, eggs, 1/2 cup panko crumbs, seafood seasoning, celery seeds, and black pepper. Mix remaining remaining panko crumbs and flour together in a shallow dish. Shape salmon mixture into 6 equal patties and coat with panko/flour mixture. In a large heavy skillet, heat vegetable oil on medium heat. When oil is ready, place croquettes in the skillet and fry until golden brown, about 3-4 minutes per side. Transfer to a paper towel lined platter. Serve with Spicy Garlic Mustard Sauce.
Spicy Garlic Mustard
1/4 cup mayonnaise
1/4 cup garlic mustard(I used Saucy Mama’s Smoky Garlic Mustard)
3-4 drops Habanero Sauce
Thoroughly mix all ingredients in a small bowl. Serve with Salmon Potato Croquettes
I love potato croquettes! When my husband and I were in Spain for our honeymoon, there were so many variations of croquettes –one of the most popular was the cod (bacalao).
