Like a whole lot of people, I promised myself that I would commit to salad lunches until Summer. It gets real old once you’re into February! So, instead of my standard salad with lemon vinaigrette, I decided to change it up. I used the flavors of a caprese salad to make this simple salad wrap. I’m showing the sandwich open faced so you can see it’s yummy goodness! Before eating, I did roll it up.
Too bad I can’t enjoy a glass of wine with this…that would make me a lonely lush, drinking all alone in the afternoon…and that’s just sad. Plus, I don’t need the extra calories.
Anyway, club soda and lime would make a refreshing beverage.

Caprese Wrap
Makes 1
1 large whole wheat tortilla
4-6 whole romaine lettuce leaves
1 thin slice of red onion, chopped
2-3 basil leaves, thinly sliced
1/4 ripe avocado, sliced
1 small tomato, sliced
1 tablespoon extra virgin olive oil
1/2 ounce shaved parmesan cheese, 1 heaping tablespoon if using grated cheese
salt & pepper
Spread out lettuce on tortilla. Top with avocado and tomato slices. In a small dish, combine olive oil, red onion and basil. Evenly distribute this mixture and parmesan cheese over sandwich. Salt and pepper to taste. Roll up as tightly as possible and cut in half to serve.
Mmmm…avocados. This looks so yummy and healthy. I would let myself eat a piece of cake after this and not even feel bad. 🙂
