Last week I did something that I called Refrigerator Challenge. It wasn’t anything that I planned, it just happened because I didn’t want perfectly good food to go to waste. Surprisingly to me, I got quite a bit of positive feedback about the project. This week, the only thing that I had on hand that might go to waste was some browned ground beef and an open jar of Marinara sauce. Good, I could pull together a quick pasta…Oops! No pasta but, I did have tortillas. Looks like I’m having pizza 🙂 Zoe got in on the act…She ran into the room with a piece of my basil plant in her mouth. I am so not using that piece!
The Unexpected Pizza
Makes 4 eight inch pizzas
4 eight inch flour tortilla
1 cup browned ground beef
1/2 tablespoons Marinara Sauce*
1 small garlic clove, finely chopped
1/2 teaspoon oregano
1 cup shredded cheese
8-10 basil leaves, torn
Extra Virgin Olive Oil
Red Pepper Flakes
Preheat oven to 400 degrees. Place tortillas on a pizza rack and bake for 5 minutes. In a shallow pan, heat browned ground beef, marinara, garlic, and oregano. Allow to simmer while tortilla heats. When tortillas are ready, spread meat mixture on top. Sprinkle with shredded cheese and top with fresh basil. Return to oven and bake for 5 minutes. Transfer to plate and drizzle with olive oil and red pepper flakes.
Excellent!! I have made a variation of this recipe a few times.
I use non stick spray on a large omelette pan, over med. high heat and “cook” the tortilla on the stove top. It takes a minute or so on each side, and adds a crispiness to the tortilla, without being too drying.
Another variation is to add salsa if you have no marinara sauce.
What a great post idea! I should challenge myself like this weekly – there’s always things lingering in the kitchen that need to be used up…
