It all started with some beautiful onion rolls that my husband purchased this past weekend. Although we used a couple for some really good club sandwiches and then some for croutons, we still had two remaining…ready to go to waste. I’d also made spinach dip over the weekend and thought that this could make an incredible combination. If you’ve ever had the spinach & bacon souffles at Panera Bread, you’ll know what I mean. They use what seems like a croissant dough crust, filled with a savory spinach & egg mixture, and topped with bacon. I supposed that I would make more of a bread pudding…cube the bread, rework my spinach dip with milk & egg, and add cheese & bacon.

Savory Spinach Bread Pudding
Serves 6
2 large onion rolls, cubed(about 2 1/2 cups)
1 cup spinach dip
2 eggs
1 1/2 cups milk
1 cup sharp cheese, shredded
2 slices cooked bacon, crumbled
1/4 teaspoon black pepper
1/4 teaspoon salt
butter, for greasing pan
Preheat oven to 350 degrees. Butter a 8 x 8 inch baking dish. In a bowl, whisk eggs, milk, salt, and pepper. Pour 1/2 cup of egg mixture in the buttered pan. Add bread cubes to pan, allowing them to soak up the egg mixture. Stir spinach dip, 3/4 cup shredded cheese, and 1 strip crumbled bacon into the remaining egg mixture and pour over bread cubes. Sprinkle evenly with remaining shredded cheese and crumbled bacon. Bake for 30 minutes. Allow to stand for 5 minutes before serving.
Oh I love the idea of a savory bread pudding. Gonna have to try this for sure.
