I know what you’re saying: “Who needs a recipe for cucumber and tomato salad?!”
Well, it’s not just for the fancy edged cucumbers…Fresh basil & garlic make this refreshing salad a standout among all others 🙂 It’s also great quick ‘throw together’ for any picnic, BBQ, or summer buffet. It really plays well with others.
It’s really too bad that my camera decided to develop a case of “what photos, lady?”. Maybe it heard me talking about it’s upcoming replacement. Anyway, the salad was so simple to make I took the time to make some lovely photos of the process. Like the way, Mrs. Compton, my home economics teacher at Lincoln Elementary School taught me to score cucumbers before slicing them for a salad.
Feel free to make this salad without fancying up your cucumbers…just don’t invite Mrs. Compton.

1 small clove garlic, finely minced
1/4 cup extra virgin olive oil
2 tablespoons fresh lemon juice
Score all around cucumber lengthwise with the tines of a fork to create a decorative edge. Slice cucumber into 1/8-inch rounds and place in a large bowl. Quarter tomatoes lengthwise and then cut pieces into halves(8 pieces per tomato. Add the tomatoes, scallions, and basil strips to the bowl with cucumbers.
