I know what you’re saying: “Who needs a recipe for cucumber and tomato salad?!”
Well, it’s not just for the fancy edged cucumbers…Fresh basil & garlic make this refreshing salad a standout among all others 🙂 It’s also great quick ‘throw together’ for any picnic, BBQ, or summer buffet. It really plays well with others.
It’s really too bad that my camera decided to develop a case of “what photos, lady?”. Maybe it heard me talking about it’s upcoming replacement. Anyway, the salad was so simple to make I took the time to make some lovely photos of the process. Like the way, Mrs. Compton, my home economics teacher at Lincoln Elementary School taught me to score cucumbers before slicing them for a salad.
Feel free to make this salad without fancying up your cucumbers…just don’t invite Mrs. Compton.
Cucumber & Tomato Salad
Serves 6
1 half english cucumber, or 1 medium salad cucumber
4 Roma tomatoes, ripe but still firm
2 scallions(green onions)
4 fresh basil leaves, rolled and cut into strips
1 small clove garlic, finely minced
1/4 cup extra virgin olive oil
2 tablespoons fresh lemon juice
sea salt
black pepper
Score all around cucumber lengthwise with the tines of a fork to create a decorative edge. Slice cucumber into 1/8-inch rounds and place in a large bowl. Quarter tomatoes lengthwise and then cut pieces into halves(8 pieces per tomato. Add the tomatoes, scallions, and basil strips to the bowl with cucumbers. In a small lidded jar add garlic, olive oil, and lemon juice. Cover jar and shake well to mix. Pour mixture over salad and toss. Cover and refrigerate until ready to serve. Prior to serving, toss salad and sprinkle with salt and pepper.

Refreshing looking salad! I bought a basil about a week and a half ago and it’s dying already. 🙁 I think I get too much sunlight in the kitchen or something. In any event, when I get a new one I’m pretty sure I’ll be putting this together!
I love, love, LOVE cucumber and tomato salad, especially on a 100 degree day like today! Yours looks so tasty! I like to throw in a little balsamic and feta in mine.
