Browned butter give these cookies a nutty depth of flavor that you don’t expect in a cookie without nuts.
Wow, I almost fooled myself with that browned butter tidbit! The truth is, I forgot that I left the burner on and the butter browned as I looked at funnyordie.com(if you’ve seen the Wayne Brady/Bobby Brown video or The Landlord, you understand). I kept smelling something…a good smell…and I thought that my daughter had taken over and started the baking process. After all, it was a chance for her to play with cookie dough and m&m candies. A few minutes later, I found the beautifully browned butter and decided to move forward with making the cookies. I was really lucky…the butter could have easily burned.
I made these cookies so quickly and simply, I did not take the time to photo the process. Start to finish, I had 2 dozen cookies in 30 minutes! If I’d used 2 baking sheets, it would have only taken 20 minutes.
Quick & Easy Triple Chocolate Cookies
Makes 2 dozen
1 box brownie mix(I used Ghirardelli double fudge)
1/3 cup butter, melted/browned* & cooled
1 egg
1 teaspoon vanilla extract
M&M candies(pastel, plain milk choc.)
*If you choose to brown your butter….Simply place butter in a small saucepan and heat on medium/low, until butter has browned but, not burned.
Preheat oven to 375 degrees. In a bowl, combine brownie mix, melted butter, egg, and vanilla. Stir until completed blended. This will make a very thick cookie dough. Use a tablespoon of dough for each cookie, shaping the dough into balls. Place 2 inches apart on a lined baking sheet. Stud each dough ball with 4-6 candies. Bake for 11 minutes. Allow to cool on baking sheet for 3 minutes before transferring cookies to a wire rack for complete cooling.

These are so spring/Easter perfect. I’m going to try this because the last time I made chocolate cookies they were a major fail. I like your idea of using a brownie base!
