With our schools closing three hours early due to the heat, I thought that this would be the perfect super easy chilly treat for my daughter to enjoy. I’d planned on purchasing large soft baked cookies for this treat but there no chocolate cookies…How did this happen?! Using a brownie mix, I ended up making my own cookies. I had not eaten strawberry ice cream in such a long time…plus, how pretty are pink and brown together?!
Feel free to change the cookies and/or ice cream flavors…The options are pretty unlimited and the results will be cool and tasty!
|Just add a generous scoop of ice cream to half of the cookies…|
|Top with remaining cookies…gently press to push ice cream to edges…|

Quick & Easy Ice Cream Sandwiches
12 large soft cookies, like Pepperidge Farms Soft Baked
(or use this recipe) with or without M&Ms
1 half gallon ice cream, slightly softened
Simply place a generous scoop of ice cream on half of the cookies, top with remaining cookies. Gently press together so that ice cream pushes to edge. Wrap individually with plastic wrap and place in freezer to harden for 2 hours.
