In the South, the porch is sometimes only 2nd to the kitchen for gathering. Having moved to Baltimore County, I noticed that most homes don’t have porches. So, having a porch was a big plus when we found our current home. When the weather cools down, we spend most every evening on the porch just sitting, talking and enjoying coffee, iced tea or a good glass of wine. Bruschetta with Tomato & Basil
1 cup cherry tomatoes, rinsed and quartered
1 sprigs of fresh basil (8-10 leaves), cut into strips
¼ cup red onion, finely chopped
¼ cup extra virgin olive oil
1 ball of fresh mozzarella, thinly sliced into 12 pieces
1 clove garlic, cut in half
1 small baguette of French bread
salt & pepper
Cut baguette on the diagonal into 1 inch slices (12). In a large skillet, dry toast for 2 minutes on each side (I used a pan with a grill pattern). When finished, rub one side of each toast with the cut garlic.
In a bowl combine cherry tomatoes, basil, red onion and olive oil. Gently toss to mix. On a large plate, arrange toasts with garlic side up. Lay a slice of mozzarella on each toast and top with a spoon of the tomato mixture. Sprinkle with salt and pepper.
