For the past 9 years, Thursday night has been known as “pizza night” in our home. This started when Alyson was in first grade and every Friday was their weekly test day. They had tests for their weekly vocabulary words and spelling tests for an entirely different set of words. With all of the studying, getting dinner together was always a challenge. Thursday became the night that Pizza Hut or Papa John’s delivered to our house. As she got older and things got easier, there was really no need for pizza delivery. We kept pizza night as a tradition with delivery sometimes or me making it other times.
Pizza night always results in leftover pizza for breakfast on the following morning. This time, since I’m making the pizza(even the crust!) for dinner, I’ve decided to make a second one especially for breakfast….yeasty crust, cheesy eggs, sausage, bacon, mushrooms, and onions.

Breakfast Pizza
Serves 4
Quick Yeast Crust(recipe below) or one 12 inch pizza crust
4 eggs
2 tablespoons half & half or milk
1 cup cheese, grated
1 tablespoon butter
4 ounces sausage, browned and crumbled
4 slices bacon, fried and crumbled
1/2 cup sliced onion
1/2 cup sliced mushrooms
1 tablespoon extra virgin olive oil
red pepper flakes, optional
Quick Yeast Crust
slightly adapted from All Recipes
makes 1 thick 16 inch crust or 2 thin 12 inch crusts
1 pkg rapid rise yeast
2 teaspoons brown sugar
1 cup warm water
1/2 teaspoon salt
2 tablespoons extra virgin olive oil
2 1/2 cups all purpose flour
In a large bowl, mix yeast, brown sugar, and water. Allow to stand for 10 minutes, yeast mixture will be puffy and creamy. Add salt, olive oil, and flour and mix until smooth. Coat hands with a small amount of olive oil and shape dough into a ball. Allow to rest on a lightly floured surface for 5 minutes. Divide dough into 2 equal pieces and wrap 1 with plastic wrap and refrigerate for later use.
Preheat oven to 450 degrees. Roll 1 of the dough pieces into a 12 inch round and place on a pizza sheet. Bake pizza crust for 10 minutes and remove from oven. In the meantime, saute onions and mushrooms with 1 tablespoon of olive oil in a heavy skillet on medium/high heat until softened(about 5 minutes). Beat eggs with half & half until well blended. Add 1/2 cup grated cheese. Melt butter in the same heavy skillet on medium/high heat. Make sure that melted butter coats the bottom and sides of pan. Pour egg mixture into skillet and soft scramble for 1 minute. Spread soft eggs over the surface of the partially cooked pizza crust. Evenly sprinkle top with sausage, bacon, sauteed mushrooms & onions. Cover with remaining 1/2 cup of cheese. Return to oven and bake for 5 minutes. Sprinkle with red pepper flakes if desired.
Cheesy eggs as your sauce…I think I love you ~snickers~…we do a weekly breakfast for dinner meal & I am always looking for new ideas…I am def adding this to the rotation!!!
