Yes, more please!
Those are the words I found myself saying this past Sunday(Mothers Day). It started with the men preparing a breakfast buffet for the ladies at church. Everything was delicious, especially my husband’s contribution, Savory Breakfast Potatoes. (Yes, more please!)
We didn’t do much for lunch because dinner would be substantial. OOOOOHHHHH Dinner! Gerald grilled snow crab clusters, shrimp, lobster tails, and corn. Imagine a crab boil, but on the grill. Alyson thought to add an appetizer, creamy hot crab dip. This is Maryland, so it was full of lump crab meat! Dinner was rounded out with coleslaw, lemonade, and Key Lime Mousse Parfait. (Yes, more please!)

Although the food was absolutely delicious, the cherry on top of the sundae of my day was: They completely cleaned up “my” kitchen after dinner. (YES, MORE PLEASE!)
Anyway, with all that said and done, I wanted to post the dessert recipe. It’s easy, refreshing, and delicious! And who doesn’t like love a parfait?!

|Assembly begins with a layer of the cookie crumb mixture|
|Add a layer of the mousse mixture and repeat 2 times…garnish with reserved whipped cream, crumbs, & lime|
Key Lime Mousse Parfait
(I used 6 -13oz. stemmed wine glasses)
1 – 8oz. bar cream cheese, softened
1 can sweetened condensed milk, not evaporated milk
1/2 cup key lime juice
1 cup heavy whipping cream
1 teaspoon vanilla extract
2 tablespoons confectioner’s sugar
1 1/2 cups cookie crumbs, I crushed about 12 palm sized plain oatmeal(no raisins) cookies
2 tablespoons unsalted butter, melted
1 tablespoon sugar
6 thin lime slices(I used less that 1 whole lime)
In a bowl, beat cream cheese until smooth. Add condensed milk and beat well to combine, scrape down sides of bowl and beat again until completely blended. Add lime juice, stirring by hand(a mixer will splash it out of the bowl). Stir until just mixed before using a mixer to thoroughly combine. Refrigerate until chilled and thickened, at least 4 hours.
In a bowl, combine cookie crumbs, sugar, and melted butter. Stir to completely incorporate. Cover and set aside until ready to use.
When ready to assemble parfaits. Place whipping cream, vanilla, and confectioner’s sugar in a bowl. Beat until creamy stiff peaks form, being careful not to over beat and become grainy. Reserve 1/2 cup of the whipped cream and fold the remaining portion into the cream cheese mixture.
Sprinkle 1 heaping teaspoon of cookie crumb mixture into each glass. Spoon a layer of mousse atop, tapping to help distribute evenly. Repeat process two more times, ending with a layer of mousse. Dollop a teaspoon of whipped cream atop each. Sprinkle each with a good pinch of the remaining crumb mixture. Garnish with lime slice
