I love sweets…Better yet, I love rich, creamy, buttery, sugary, gooey, stuff! Since I’ve had my share in the past weeks, I don’t want to continue to go overboard…Actually, I want to continue to go overboard and beyond! (The first step is admitting…)
Anyway, I decided to pickup some grapefruit. That was a pretty straightforward decision. Apparently, in the back of my mind, I figured out that I could have the best of both worlds…Sweetened, Broiled Grapefruit with a Creamy Honey Lime Yogurt Topping.
Broiled Grapefruit with Creamy Honey Lime Topping
Serves 4
2 large pink or red grapefruit, chilled and sectioned*
4 teaspoons raw sugar
1 tablespoon unsalted butter, cold and cut into bits
1/4 teaspoon vanilla extract
1/4 teaspoon cinnamon
Honey Lime Yogurt Topping:
1/2 cup plain greek yogurt, I used 2% fat content
1 tablespoon honey
1/2 teaspoon lime juice
1/4 teaspoon vanilla extract
1/2 teaspoon lime zest
In a small bowl mix yogurt, honey, lime juice, and vanilla extract until smooth and creamy. Refrigerate until ready to use.
*To section grapefruit; use a sharp knife to remove peeling and all white pith. Next, run knife along edges of each section to detach from core. Be careful to make sure that no bitter pith or section skin remain.
In a small bowl, mix sugar, butter, vanilla & cinnamon until crumbly. In a shallow baking dish, arrange grapefruit sections in a single layer and sprinkle evenly with sugar mixture. Turn oven to broil and place on a rack as close as possible to the broiler element. Broil for 5-6 minutes, until sugar caramelizes or use a kitchen torch to achieve the same result. Serve immediately with dollop of yogurt topping and sprinkling of lime zest.
