Taquitos are one of our favorite things. I usually make them using the taco meat recipe on the Taco Bell seasoning packet. Because I’m concerned about salt and preservatives, I’ve begun making them by putting together my own seasonings: cumin, chilli powder, paprika, onion, garlic, pepper and a small amount of salt.
This time, I added roasted corn kernels and black beans. My family loved them!

Taquitos
Makes 8
1 lb Ground Beef
1 cup cold water
2 cloves garlic, finely chopped
½ teaspoon cumin
½ teaspoon chili powder
½ teaspoon onion powder
¼ teaspoon hot paprika
¼ teaspoon salt
¼ teaspoon black pepper
½ cup black beans, drained
½ cup frozen corn kernels, thawed(I used Trader Joe’s Fire Roasted)*
8 small corn or flour tortillas, I used corn
2 tablespoons vegetable oil
1 tablespoon unsalted butter
1 cup sharp cheese, shredded
¼ cup red onion, chopped
½ cup sour cream
2 cups lettuce, shredded
Salsa
In a large bowl, combine beef and water, mixing until water is absorbed. Transfer to a heavy skillet on medium high heat. Cook, stirring occasionally, until beef is browned for about 8 minutes. There will be a good bit of water in the skillet(at this point, it’s not pretty but it’ll get there 🙂 ). Stir in garlic and dry seasonings, cover and reduce heat and allow to simmer for about 10 minutes or until water has evaporated. Allow meat to cool to room temperature before assembling taquitos.
Preheat oven to 400 degrees. Lay out tortillas. Divide beef, black beans, and thawed corn kernels among tortillas. Roll up and place, seam side down on a plate. Heat oil and butter on medium-high heat in a heavy skillet. When butter has melted, turn off heat and carefully roll each taquito in the oil to coat, finishing seam side down. Place in oven and bake for 18 minutes. Serve on lettuce with shredded lettuce, sour cream, chopped onion, and salsa.
