Makes 6 half cup servings
1/2 cup granulated sugar
1/3 cup unsweetened cocoa
1/4 cup corn starch
1/8 teaspoon salt
2 egg yolks
12 ounces evaporated milk (Pet Milk)
1 1/2 cups milk
2 ounces semi-sweet chocolate, chopped(I used chocolate chips)
1 teaspoon vanilla extract
Mini Marshmallows, toasted***
In a large bowl, combine sugar, cocoa, corn starch and salt.

Next add egg yolks
|Remove any white membrane attached to the yolk…They’ll leave hard white pieces in your pudding…YUCK!|
Add all milk and whisk together until smooth. Transfer to a sauce pan and cook on medium-low heat, stirring constantly, until mixture begins to boil and is very thick. This should take about 12 minutes. Remove from heat and add chocolate. Stir until completely melted. Stir in vanilla.

|Using a shallow dish, allows for quicker chilling time 🙂|
Pour pudding through a strainer(if you stirred constantly, you shouldn’t have to do this) into a shallow, heat-proof dish. Apply plastic wrap to pudding surface and refrigerate at least 2 hours. When ready to serve, divide among 6 stemmed glasses. Top with toasted marshmallows.
***For toasted marshmallows, I skewered 3 mini marshmallows per serving and heated over my stove top gas flame.
