Chocolate Butter Cookies
Makes 2 dozen
1/2 cup unsalted butter, cold and cut into bits*
1/2 cup plus 1/4 cup sugar
1 teaspoon vanilla extract
1/3 cup cocoa
1/4 teaspoon salt
1 1/4 cups all-purpose flour
1 egg yolk
1 tablespoon half & half
Preheat oven to 350 degrees. In a food processor, add 1/2 cup sugar, butter, vanilla, and salt and mix until creamy. Add cocoa and mix until incorporated. Add flour and pulse to mix. Mixture will be crumbly. Add egg yolk and half & half. Pulse to form dough. Remove dough from processor. Roll dough into 24 1-inch balls. Dip balls in remaining 1/4 cup sugar, coating only half of each ball. Place on parchment lined cookie sheet, sugar side up. Use a flat bottomed glass to flatten each ball to 1/4 inch thickness. Bake for 10 minutes. Remove from oven and allow to rest for 2-3 minutes before transferring to a cooling rack.
*If not using a food processor, do not cut butter. Allow butter to soften, mix in egg yolk and half & half before adding cocoa and follow the remaining steps. Also allow dough to chill for at least 1 hour before forming into balls.
