What’s better than mashed potatoes filled with garlic steeped PetMilk & butter, Parmesan cheese, and a little salt? Not much but, dress them up with a topping made of sauteed mushrooms, onion, garlic, and crisp bacon and you’ll love them even more!
I know that I issued a caution but don’t worry…I used organic bacon 🙂

Dressy Mashed Potatoes
Serves 4-6
2 strips of bacon
1 tablespoon unsalted butter
1/2 cup thinly sliced onion
1 cup sliced mushrooms
1 clove garlic, finely minced
2-3 large potatoes
6 tablespoons unsalted butter
1/2 cup PetMilk(evaporated milk)
1 clove garlic, smashed
1/4 cup grated Parmesan cheese
1/4 teaspoon salt
Start by making the topping…
Cut bacon into 1/2 inch slices. Cook bacon in a heavy skillet on medium/high heat until browned and crispy. Reserving bacon dripping in skillet, transfer cooked bacon to a small plate until ready to use. Add 1 tablespoon of butter to the skillet with bacon drippings and allow to melt on medium heat. Once butter is sizzling, add onion, mushrooms, and finely chopped garlic. Saute until onions are browned and caramelized. Remove from heat and stir in cooked bacon. Set aside until ready to serve
Next, make the mashed potatoes…
Wash, peel, and cut potatoes into cubes. Bring 2 quarts of water and 1 teaspoon of salt to a boil in a large sauce pan. Add potatoes to water and allow to come back to a boil, cooking for 20 minutes. Remove from heat and drain water from potatoes. While the potatoes are cooking, heat 6 tablespoons of the unsalted butter, PetMilk, and the smashed clove of garlic on low heat, allowing the butter to melt and the garlic to steep in this mixture. Once mixture begins to boil, remove from heat and cover until ready to use.
Discard the smashed clove of garlic and pour the butter/PetMilk mixture into the saucepan with potatoes. Use a hand mixer on medium to beat potatoes until just smooth, about 1 minute. Add Parmesan cheese and salt, stirring until smooth. Transfer potatoes to a serving bowl and top with bacon mixture. Serve immediately.
Talk about great tasting mashed potatoes, you have taken them over the top with your recipe.
