Y’all, it’s been sooooooo hot! Entirely too hot to turn on an oven…Unless you’re having a peach cobbler or cake emergency. (Yeah, that can really happen)
Since broccoli does not fall into that emergency category, I’ve had to learn to do my roasting on the stove top. Lightly steamed broccoli can be transformed into one of the best side dishes you’ll ever eat and you won’t have to turn on the oven! Save that heat for your dessert emergency 🙂
Prepare broccoli spears for a light, five minute steaming. |
Heat olive oil, butter, and chopped garlic before adding steamed broccoli. |
Saute until caramelized, about 10 minutes. |
Sprinkle with Parmesan and you just might forget the peach cobbler and cake 🙂 |
Caramelized Broccoli
3 cups fresh broccoli spears(about 1 large bunch of broccoli)
1 cup water
2 tablespoons olive oil
1 tablespoon unsalted butter
1 large clove garlic, roughly chopped
2 tablespoons grated Parmesan cheese
salt & pepper to taste
Bring 1 cup water to boil in a saucepan with steamer attachment. Place broccoli in steamer and steam covered for 5 minutes. In a heavy skillet heat olive oil, butter, and chopped garlic until butter begins to sizzle. Add steamed broccoli, stirring to coat with oil mixture. Cook on medium heat for 10 minutes, turning occasionally until broccoli is caramelized. Remove from heat and sprinkle with Parmesan.
i love doing my veggies like this.I do cauliflower and green beans like it and my family always love it. I don’t think I have tried broccoli though so I will have to do that! Hear is to hoping it cools off quickly!
