Sometimes it’s served on a Mickey Mouse Plate…
The Mickey Mouse plate belongs to my daughter and, you cannot imagine how many “plain” grilled cheese sandwiches I’ve served on it. From the age of 4 until the age of 10, the only things that I could get her to eat were grilled cheese sandwiches or chicken strips, always served on this plate.
With Alyson at school, this sandwich was for me and it was as far away from “plain” as it gets. This one is made with blue cheese, crispy bacon, apple slices, avocado, and tomatoes. Served with Cheetos, this was complete grilled cheese happiness!

Blue & Bacon Grilled Cheese Sandwiches
4 slices of bread, I used sprouted wheat
4 sliced of bacon, cooked crispy
1 small apple, cored and thinly sliced
1/2 avocado, sliced
4 tomato slices
2 tablespoons crumbled blue cheese
2 tablespoons cream cheese, softened
2 teaspoons hot sweet mustard
1 tablespoon unsalted butter, softened
Place 2 slices of bread in a large skillet on medium/high heat. Allow to heat on one side for 2 minutes until warm. Remove bread from skillet and spread half of mustard on the warmed side of the bread. Next, spread the warmed pieces with a tablespoon each, with the softened cream cheese and then evenly sprinkle with the blue cheese crumbles.
Place half of the softened butter in the skillet and allow to melt on medium heat. Place the 2 prepared bread slices, topped side up in the skillet and allow to toast for 3 minutes. Remove from heat and top with apple, bacon, tomatoes, and avocado. Use the remaining softened butter to spread on the remaining 2 slices of bread. Place them in the skillet, butter side down, allow to toast for 3 minutes, Remove from skillet and spread plain side with remaining hot sweet mustard, place mustard side down atop other sandwich half.
