We spend a small fortune on convenience foods. You know, stopping for something that you don’t need but “just want” because the drive-thru at Chic-Fil-A is so convenient. Okay, Chick-Fil-A is not only convenient, it’s good. We’ll plan on just the strips or nuggets but end up with lemonade, milkshakes, fries and/or pie. Today, I decided to treat us to chicken nuggets and just a few onion rings at home. That’s money that can stay in my pocket and inches that I can keep off my waistline.
Don’t let “baked” fool you…these chicken nuggets look and taste like they were deep-fried.
4 boneless, skinless chicken breasts
2 egg whites
½ cup milk
½ cup flour
½ cup pecans, finely chopped
½ cup breadcrumbs
1 teaspoon seasoned salt, I used Lawry’s*
½ teaspoon black pepper
½ teaspoon onion powder
½ teaspoon hot paprika
2 tablespoons cooking oil
2 tablespoons unsalted butter
Preheat oven to 375 degrees. Cut chicken into bite sized pieces, about 7-8 pieces per breast. In a bowl, beat egg whites with milk until well blended. Add chicken to egg mixture and set aside.
In a shallow dish, mix flour, pecans, breadcrumbs, seasoned salt, pepper, onion powder, and paprika. Dredge chicken in flour mixture. In heavy skillet, heat oil and butter until sizzling. Place chicken pieces in the skillet and allow to brown lightly. Turn each piece over and place skillet in the oven. Bake for 18 minutes.
