My Baked Oatmeal Breakfast Cereal is like a cross between oatmeal cookies and granola. Scoop some in a bowl and serve with warm milk. It’s better than any instant oatmeal! Don’t be surprised if you find yourself eating it by the handfuls!
Baked Oatmeal
Makes about 8 servings
3 cups quick oats
½ cup packed brown sugar
¼ cup granulated sugar
1 tablespoon ground cinnamon
¼ teaspoon salt
½ cup unsalted butter, melted
½ cup Pet Milk (evaporated milk…not condensed milk)
1 tablespoon vanilla extract
1 cup chopped walnuts
1 cup raisins
Preheat oven to 350 degrees. In a large bowl combine oats, sugars, salt, cinnamon, and nuts and stir until evenly distributed. Stir in melted butter, Pet Milk, and vanilla. Spread mixture evenly on a lined baking sheet. Bake for 25 minutes. Cool slightly and add in raisins.
Serve ½ cup of Baked Oatmeal with ½ cup of warm milk. Store refrigerated in an airtight container for up to 2 weeks.
I’ve never made baked oatmeal before but homemade oatmeal is all I eat (those packets are way to sweet) so I’ll have to try this out!
yum! i love, love, LOVE baked oatmeal! i recently discovered it a couple of months ago, and have been obsessed every since. i make mine with pumpkin puree, craisins, and chopped apples. it’s such a great breakfast!
