Baked chicken thighs are inexpensive, very easy to prepare, and super tasty. Today I baked these for dinner but, I often cook and store them to use in various recipes like; chicken pot pie, chicken and dumplings, or chicken enchiladas.

4-6 chicken thighs
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/2 teaspoon red pepper flakes
1/2 teaspoon rosemary
2 cloves of garlic, smashed(but left intact)
1 tablespoon extra virgin olive oil
1 tablespoon unsalted butter
Preheat oven to 375 degrees. Rinse and pat dry chicken thighs. In a small shallow dish, combine salt, pepper, onion powder, red pepper flakes, and rosemary. Sprinkle seasoning on both sides of the chicken thighs. In a large heavy skillet, heat olive oil, butter and garlic on medium heat until garlic is slightly softened and aromatic, about 2 minutes. Remove garlic from skillet, but reserve it, you will add it back when chicken is ready for the oven. Adjust heat to medium-high and place chicken skin side down in the hot skillet and allow to brown, about 3 minutes. Turn chicken over, return garlic to skillet and bake in oven for 45 minutes.
