Apricot & Blue Cheese Savouries
Adapted from The Runaway Spoon
Makes about 18
4 tablespoons unsalted butter
2 ounces blue cheese
1/2 cup all-purpose flour
1/4 teaspoon black pepper
1 good pinch of salt…less than 1/4 teaspoon
1/4 cup finely chopped walnuts
1/4 cup apricot or fig preserves
In a food processor, combine all ingredients except walnuts and preserves. Blend until mixture forms a dough ball. Remove dough from processor and kneed a few times on a lightly floured surface. Form dough into a log and roll in chopped walnuts. Wrap dough in plastic wrap and refrigerate for at least 3-4 hour or overnight. When ready to use, preheat oven to 350 degrees. Remove dough from plastic wrap and cut into 1/4 inch slices. Make and indention in the center of each round and fill with a small amount of preserves. Place rounds on a lined baking sheet and bake for 12-14 minutes. Transfer to wire rack and allow to cool completely before serving.
